Resep Tori Soboro (untuk 4-5 porsi)
Japanese style soboro:
200 gr paha ayam cincang
2 sdm kecap asin
1 sdm gula palem
1,5 sdm mirin / arak masak / jus apel
1 siung bawang putih halus
1 cm jahe halus + 1 sdm air
½ sdt dashi powder / kaldu bubuk / penyedap
3-4 sdm air
Indonesian style soboro:
200 gr paha ayam cincang
1 sdm saus tiram
1 sdm kecap ikan
½ sdm gula
½ sdt kaldu / penyedap
5 siung bawang putih cincang
6 buah cabai rawit merah
3-4 sdm air
1 sdt dark soy sauce
Bahan telur:
4 butir telur
1 sdt kecap asin
2 sdt gula
1 sdt dashi / kaldu
Bahan buncis gomae:
200 gr buncis
500 ml air
1 sdm gula
1 sdt garam
2 sdt kecap asin
1 sdt gula
2 sdm wijen sangrai, tumbuk
Pelengkap:
Nasi
Langkah:
1. Untuk Japanese style, campurkan ayam dengan kecap asin, gula, dashi bubuk, air jahe, dan bawang putih, aduk, diamkan beberapa menit
2. Masukkan mirin dan air, aduk, lalu masak di api kecil sedang sambil di aduk hingga bumbu meresap
3. Untuk Indonesian style, campurkan ayam dengan kecap ikan, saus tiram, gula, penyedap, aduk rata, diamkan beberapa menit, lalu tambahkan air, aduk
4. Panaskan minyak, tumis bawang putih dan cabai rawit hingga harum, lalu masukkan ayam dan dark soy sauce, masak hingga matang
5. Untuk buncis gomaae, rebus buncis dengan garam dan gula selama 2-3 menit, lalu bilas dengan air dingin, iris
6. Tumbuk wijen yang telah di sangrai, lalu tambahkan gula dan kecap asin, tumbuk kembali kemudian campurkan wijen ke dalam buncis
7. Kocok telur, tambahkan kecap asin, dashi bubuk, dan gula, aduk
8. Panaskan minyak, masak telur sambil di aduk perlahan hingga matang
9. Tori soboro siap disajikan

1.5 tbsp mirin / cooking wine / apple juice
1 clove garlic, minced
1 cm grated ginger + 1 tbsp water
½ tsp dashi powder / stock powder / flavor enhancer
3-4 tbsp water
Indonesian-style Soboro:
200 g ground chicken thigh
1 tbsp oyster sauce
1 tbsp fish sauce
½ tbsp sugar
½ tsp stock powder / flavor enhancer
5 clove garlic, minced
6 pc red bird’s eye chili
3-4 tbsp water
1 tsp dark soy sauce
Eggs ingredients:
4 pc egg
1 tsp soy sauce
2 tsp sugar
1 sdt dashi / stock powder
Green Beans Goma-Ae:
200 g green bean
500 ml water
1 tbsp sugar
1 tsp salt
2 tsp soy sauce
1 tsp sugar
2 tbsp ground toasted sesame
Others:
Rice
Steps:
1. For the Japanese-style, mix the chicken with soy sauce, sugar, dashi powder, ginger liquid, and garlic. Stir and marinate for a couple minutes.
2. Add the mirin and water in. Stir and cook on medium-low heat while stirring until the sauces are absorbed.
3. For the Indonesian-style, mix the chicken with soy sauce, oyster sauce, sugar, and flavor enhancer. Stir and marinate for a couple minutes.
4. Heat the oil. Sauté the garlic and bird’s eye chili until fragrant. Add the chicken and dark soy sauce in and cook through.
5. For the Green Beans Goma-Ae, boil the green beans with salt and sugar for 2-3 minutes. Rinse with cold water and slice.
6. Grind the toasted sesame, then add sugar and soy sauce. Grind again, then add into the green beans.
7. Beat the eggs. Add soy sauce, dashi powder, and sugar. Stir.
8. Heat the oil. Cook the eggs while stirring slowly until they’re cooked.
9. Tori Soboro is ready to serve.
