REST OF THE WORLD: heat oven to 230 or 205 convection (fan on)
blanching water:
1.9 liters water
20 grams salt
2 grams baking soda

INGREDIENTS:
1.5-2 kilogram russet or gold potatoes
80 milliliters olive oil
60 grams unsalted butter
3-4 sprigs fresh rosemary
3-4 sprigs fresh sage
4 cloves smashed garlic (peels on)
Maldon salt
Black pepper

AMERICA: preheat oven to 450 or 400 convection (fan on)
blanching water:
2 .2 quarts water
1 ounce salt
3/4 tsp baking soda

INGREDIENTS:
3-4 lbs Russet potatoes or gold
1/3 cup olive oil
4 TBSP unsalted butter 😉
3-4 sprigs fresh rosemary
3-4 sprigs fresh sage
4 cloves smashed garlic (peels on)
Maldon salt
Black pepper
