Canning Potatoes - The French Fry Cut

Today I'm canning seven quarts of French Fries. I have never canned fries before. Will they stay intact or fall apart in the canner?

Process potatoes at 10 pounds pressure for 35 minutes for pint jars and 40 minutes of quart jars based on an altitude of 1,000 feet above sea level or less.

UPDATE:
Ok, so a few days later I decided to open and fry up one jar of my canned fries for dinner. I was somewhat concerned because during the canning process I had a Pressure Canner malfunction. It would not pressurize. I had to stop the whole process and check the lid, seal and anything else that could hinder the proper functioning, and re-started the process. Needless to say this batch sat in boiling water for at least 30 minutes longer than is required. I had to handle these fries very gingerly during the cooking process, but was rewarded by the comment that these were likely the best fries I had ever made, and so ....I will can fries again!
Lesson Learned: Use a Wide-Mouth Jar in the future.
