Arroz Caldo Recipe

Arroz Caldo is originally a Chinese dish called congee but because of Spanish influence in the Philippines, it became popularly named as so. It is Filipino comfort food served as a light meal on a cold rainy day.

Arroz Caldo literally means hot rice. It is with flavorful chicken and ginger that comes with hard-boiled eggs, spring onions and toasted garlic bits.

Ingredients:

* 1 cup glutinous rice
* 1/2 cup rice
* 1 medium onion, minced
* 5 garlic cloves, minced
* 1 thumb-size ginger, minced
* 6 - 7 pcs chicken parts
* 5 cups chicken stock
* 1 Tbsp fish sauce
* 1 pc chicken cube
* 1 tsp ground black pepper
* 2 Tbsps cooking oil
* 1 bunch spring onions (for garnishing)

Procedure:

1. Sauté onions, garlic, and ginger. Add the chicken parts and fish sauce. Slightly cook the chicken.

2. Add the glutinous rice and the regular rice. Mix well and sauté for a few minutes.

3. Pour the chicken stock and let it boil to cook the rice. Cover and simmer until the desired consistency is reached. Mix it from time to time to prevent the rice from sticking at the bottom. Add the ground black pepper and stir.

4. Serve hot. Add the sliced hard-boiled eggs and garnish with spring onions and toasted garlic bits.
