Traditional Lebkuchen Recipe
Important Note: Bake at 180°C for 10 minutes.

Allow the Lebkuchen to cool completely before eating. They may feel soft initially, but will firm up as they cool. Take care not to overbake to prevent them from becoming dry.
Ingredients:
• 200g dark, high-quality honey (ideally)
• 100g muscovado sugar
• 1 egg
• 2 tsp cinnamon
• 1 tsp ginger
• 1.5 cloves (ground)
• 0.5 tsp salt
• 1.5 tsp allspice
• 1.5 tsp nutmeg
• 100g ground almonds (preferred)
• 2 tbsp cocoa powder
• 1 tsp baking powder
• 1/2 tsp bicarbonate soda + splash of vinegar
• 2 tbsp rum (if non alcohol 2 tbs of orange juice, you need to replace the liquid)
• Zest of 1 lemon
• Zest of 1 orange
• 125g unsalted, softened butter
• 380g flour
Steps:
1. Mix the honey, sugar, and egg until well combined.
2. Add all the spices, salt, ground almonds, cocoa powder, baking powder, and bicarbonate soda (activate the soda by adding a splash of vinegar and letting it bubble first). Mix thoroughly.
3. Stir in the rum, lemon zest, and orange zest, combining until smooth. Cover and let the mixture rest for at least 1 hour for 2 hours will be more delicious 😉
4. Fluff the butter with a mixer, then add it to the rested mixture. Combine well.
5. Gradually incorporate the flour until fully mixed.
Shaping the Lebkuchen:
• For traditional shapes: Form 40g balls.
• For cutouts: Roll the dough into a 1cm-thick sheet, place it in a plastic food bag, and freeze for 5 minutes to make cutting easier.
Bake for 10 minutes at 180°C.

They may still feel soft after 10 minutes, but let them cool completely as they will harden afterward; baking time depends on your oven, so if needed, try up to 12 minutes—you’ll know what works best after the first bake.
