Recipe: Avocado Toast with Poached Egg
Ingredients:
2 slices of sourdough bread (or your favorite bread)
1 ripe avocado
1 tablespoon lemon juice
Salt and pepper to taste
2 eggs
Olive oil (optional)
Red pepper flakes (optional)

Instructions:
Toast the bread to your desired crispiness.

While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork, adding lemon juice, salt, and pepper.

Bring a small pot of water to a simmer, and carefully crack the eggs into the water to poach. Cook for 2 to 3 minutes until the whites are set but the yolks remain runny.

Spread the mashed avocado onto the toasted bread.

Carefully place the poached egg on top of the avocado toast.

Drizzle with a little olive oil, sprinkle with red pepper flakes, and serve immediately.
