Raspberry Coco Energy Bites
Makes 10
1 cup rolled oats
1 cup almond flour (optional: sub 1/2 cup for protein powder of choice)
⅓ cup unsweetened shredded coconut
½ cup crushed fresh raspberries
½ tbsp melted coconut oil
Honey or agave to taste
For coating:
Extra shredded coconut
Freeze dried raspberries

Combine all ingredients in a mixing bowl
Roll the mixture into balls by the spoonful
For the coating, crush the freeze dried raspberries into a powder and mix with shredded coconut
Roll balls into the coating
Place balls on a baking sheet lined with parchment paper and refrigerate for 15 minutes

Guilt-Free Chocolate Dessert Bites
Makes 10
1 cup old fashioned oats
½ cup ground flax seeds
½ cup creamy peanut butter
½ cup semi-sweet chocolate chips (optional: sub for vegan or carob chips)
1 tablespoon honey or agave
2 tablespoons unsweetened cocoa powder
2 tablespoons water
For coating:
Extra cocoa powder
Cinnamon (optional)

Combine all of the ingredients in a mixing bowl
Add water (1/2 tablespoon at a time) as needed until mixture sticks
Roll bites in cocoa powder and cinnamon
Place balls on a baking sheet lined with parchment paper and refrigerate for 15 minutes
