Vermicelli kheer may be simple recipe but making it real kheer consistency and texture needs art and practice.
I always fond of vermicelli payasa and each time cook that with all love to make it taste perfect.
Tips:
Cooking vermicelli with water makes it easy saves time you can add milk once it is half boiled.
Like to add jaggery then do it completely with water and add jaggery and when you off the flame add boiled hot milk and allow to set for few minutes.
Adding vanilla essence or badam milk powder gives best flavour.
You can serve hot or cold.
Roast vermicelli always with ghee giving it color and texture.
