賀年美食 芋蝦(精華教學)
材料:
📌 芋頭 - 350g
📌 粉絲 – 一扎 (浸軟)
調味材料:
📌 鹽 – 半茶匙
📌 五香粉 - 半茶匙
📌 砂糖 - 3/4茶匙
📌 菇粉 - 少許
📌 白芝麻 - 1湯匙
📌 粘米粉 - 1.5湯匙
📌 糯米粉 - 1.5湯匙
做法:
1. 芋頭刨絲,放在大盤內,另一小碗加入鹽,五香粉,砂糖,菇粉,輕力撈勻,加入在芋絲內,輕力撈勻。
2. 白芝麻用水浸5分鐘,之後瀝乾,加入在芋絲內,整盤芋絲靜止一會。
3. 大鍋內加入油,開火,待油滾。
4. 小碗內,加入粘米粉和糯米粉,撈勻,之後平均地加入在芋絲內,再輕力把粉沾滿每條芋絲。
5. 準備火鍋篩,輕力地把芋絲填滿火鍋篩內,之後再用另一個火鍋篩套在上端,再輕力轉動,做成圓狀,之後連篩一起放入油中炸,炸至轉金黃色,再用竹籤挑出已成形的芋蝦,再炸一會,可上碟。之後再繼續完成餘下份量。
6. 粉絲放入油鍋內炸一會,直至擴大成圓狀,可上碟,之後把芋蝦放在上面,即成。
Deep-Fried Taro Balls
Ingredient:
📌 Taro - 350g
📌 Bean vermicelli - some (soaked)
Seasoning ingredients:
📌 Salt - 1/2 tsp
📌 Five-spice powder - 1/2 tsp
📌 White sugar - 3/4 tsp
📌 Mushroom powder - to taste
📌 White sesame - 1 tbsp
📌 Rice Flour - 1.5 tbsp
📌 Glutinous rice flour - 1.5 tbsp
Method:
1. Shred the taro, then place it on a large plate. In a small bowl, add salt, five-spice powder, sugar, mushroom powder, and mix well lightly, then add to the taro, mix well lightly.
2. Soak the white sesame for 5 minutes, then drain, after, adding it to the taro, and rest the taro for a while to make it soft.
3. In a large pot, add oil and turn on the heat, and wait for the oil to boil.
4. In a small bowl, add rice flour and glutinous rice flour, mix well, then add all to the taro and mix well evenly.
5. Use a pot sieve, fill the taro in, and use another pot sieve to cover it, then move it around to make the taro becomes a ball shape. Do not take out the taro from the pot sieve. Place it in oil and deep-fried until the taro turns golden brown, then use a bamboo skewer to remove the taro from the pot sieve, and continue to deep-fried for a while, then transfer on a plate. Then continue to complete the remaining portion.
6. Put the bean vermicelli into the same pot and deep-fried for a while until it expands into a big round shape. Then serve on a plate, and then add the taro balls on it, and serve.
