Recipe: KAPITAN CHICKEN CURRY a Classic Nyonya Dish

We are so excited to share the very first recipe video of the series which we are collaborating with our dear friends Rheza and his lovely wife the chef. So stay tuned as we cook up even more delicious Malaysian and Asian recipes in the weeks and months ahead. Do note that all recipes in this series will be Halal or a Halal version where applicable.

Today we are featuring Kapitan Chicken Curry or Chicken Kapitan, the ever iconic Nyonya dish which is well-loved and one of my personal favorite curries. It goes so well with fragrant steamed rice or simple toasted bread.

We hope all of you like this new quick recipe format and give the recipe a try as well.
Kapitan Chicken Curry Ingredients:
1 whole chicken - cut into about 10-12 pieces
4 tbsp peanut oil or vegetable oil
4 fresh kaffir lime leaves (one leaf = both segments) - torn into quarters
2 cups water
Squeeze of lime juice

Spice Paste:
15 shallots - peeled
4 cloves of garlic – peeled and lightly crushed
3 stalks of lemongrass (use the bottom white part only)
5 fresh red chili peppers
2 table spoon chili powder
1 1/2 inch of fresh galangal
1/2 inch of fresh turmeric
1/2 inch of fresh ginger
3 candlenuts or macadamia nuts
1/4 tbsp belacan (fermented shrimp paste)

Kapitan Chicken Curry Seasoning:
1/4 tsp salt or to taste
1/2 tbsp of coconut sugar
200 ml coconut milk
