🇻🇳HORSE OFFAL SOUP: Stir-fry horse cuts (heart, liver, small intestine, etc) with salt and MSG. Add cardamom and star anise. Add water and wait for the soup to boil. Season with ginger and cinnamon. Simmer for 20 minutes and add horse blood. Finally, top up with lime leaves, lemongrass, extra ginger, and shallots. Serve with chili dipping sauce.

🇻🇳STEAMED PHO SHEET: Soak the white and red rice overnight. Grind it twice using a machine. Cook part of the liquid to have a smooth rice paste. Add the paste to the silky liquid then on a flat surface to steam. Cover with a cheesecloth. Remove after 2 minutes and then cut the noodles evenly.

🐖DRY PHO WITH PIG FACE: Steam a whole pig face for 2 hours. Blanch the pho sheet. Add herbs including mint & basil. Season with MSG, seasoning powder and ground pepper. Top up with pig eyeballs, tongue, cheeks and ear cuts. Serve alongside pickled cabbage.
