Making a simple LED circuit is the first thing I did when learning beginner electronics. The LED lets you know if you did it right (by lighting up), so it's the perfect start.
I'm a beginner in electronics myself, and I'm live-recording everything I do as I try to learn. Everything I do is on breadboards, which make it really easy to adapt and change things on the go.
