MIRCHI BAJJI | STREET STYLE MIRCHI BAJJI
Ingredients
For the bajji (fritters):
•Large green chillies (Bajji mirchi / Banana peppers)
•Gram flour (besan) – 1 cup
•Rice flour – 2 tbsp (for extra crispiness)
•Baking soda – a pinch
•Carom seeds (ajwain) – ½ tsp
•Red chilli powder – ½ tsp
•Turmeric powder – ¼ tsp
•Salt – to taste
•Water – as needed
•Oil – for deep frying
For the stuffing (optional but street-style!):
•Tamarind pulp – 2 tbsp
•Roasted jeera (cumin) powder – 1 tsp
•Salt – to taste
•Finely chopped onions – ½ cup (for topping)
•Chaat masala – for garnish
•Roasted Peanuts
Instructions
1. Prep the Chillies
•Slit the green chillies lengthwise, keeping the stems intact.
•Remove the seeds gently with a spoon if you want it less spicy.
•If you're adding stuffing, mix tamarind pulp, cumin powder, and salt. Stuff this paste into each chilli.
2. Make the Batter
•In a mixing bowl, add besan, rice flour, baking soda, ajwain, red chilli powder, turmeric, and salt.
•Add water little by little to make a thick, smooth batter (should coat the chillies well).
3. Fry the Mirchi Bajji
•Heat oil in a deep pan on medium flame.
•Dip each stuffed chilli in the batter, coat well, and gently slide into the hot oil.
•Fry until golden and crispy. Do not overcrowd the pan.
•Drain on paper towels.
4. Serve Street-Style
•Make a slit in each bajji (optional).
•Sprinkle finely chopped onions and chaat masala over the top.
•Serve hot with green chutney or tamarind chutney.
