Lemon Burst Cookies: the best biscuit!

"How have I lived this long without these in my life"... is exactly what you'll think when you bite into the first. then "where's the next one?"... these are quite simply baked heaven. Enjoy!

240g Plain Flour
1.5 tsp Baking Powder
1 Lemon (Zest only)
2 Eggs
115g Butter (softened)
200g Sugar
60g Icing Sugar
Lemon Extract - dash of...
Yellow food dye (Optional)
