Today I'm making my easy egg salad sandwich recipe. This egg salad is lighter on the mayo while still being creamy and absolutely delicious! The filling does not make the bread soggy which happens with most egg salad sandwiches. The butter is what truly makes it the best egg salad sandwich that is perfect for breakfast, brunch, lunchbox or a snack.
You can also make this easy egg salad in advance and store it in the refrigerator for later use. If you want to keep it low carb, switch the bread to lettuce and turn it into egg salad lettuce wraps!

INGREDIENTS: (3-4 sandwiches)
6 eggs
2 tbsp mayonnaise (+1 if the mixture is too dry)
1 tsp dijon mustard (regular mustard can be used)
1/4 tsp garlic powder
1 tbsp butter
2-3 stems herbs (green onion/dill/parsley/chives)
Salt and pepper to taste
Bread

TIPS:
• Once the egg salad is mixed, taste and tweak the flavor as per your liking
• Add less salt to begin with. More can be added later
• If the yolk mixture is too dry, add more mayo. Different brands can have different consistencies
• Store leftovers in the refrigerator for 3-5 days
