Hi, all! You might remember that I launched a spring botanical cookie series a while back. Well, today I’m returning to add a few summertime flowers to the mix, starting with this striking clematis climbing up a royal icing trellis! As a big-time clematis grower and lover, I couldn’t think of a more suitable flower for me to replicate! In this video, I show how to make every single royal icing piece (17-plus) that goes into this cookie. Along the way, I provide valuable tips about when to use acetate (versus parchment paper) when making contoured royal icing transfers, and how to control their degree of curvature and the definition of overpiped details.

COOKIE/ROYAL ICING TRANSFER SHAPES AND SIZES:
Cookie: Any cutter between 4 and 5 inches will work well, but the plaque I used in the video (link above) was about 4” W x 5 1/2” L
Big petals: 3/8” W x 1” L, shaped over 1 5/8”- to 1 7/8”-diameter tubes, depending on curvature desired
Small petals: 1/8” W (or less) x 7/16” to 1/2” L, shaped over 7/8”- to 1 1/4”-diameter tubes, depending on curvature desired
Centers: 1/4” W x 3/8” T, piped with generic #8 round tip; then lines piped on top with small opening in parchment paper cone, equivalent to PME #0 or #1 round tip
Vines: 2 1/2” to 5” in length, piped with both Ateco #1 and PME #1.5 round tips
Buds: Big ones piped with Cooper #17 star tip; small ones piped with generic #16 round tip
Leaves: Sizes ranging from 1/4” W x 3/4” L to 1” W x 1 1/2” L, wrapped around 7/8”- to 1 5/8”-diameter tubes, depending on curvature desired

AIRBRUSH COLORINGS:
For small inner petals: AmeriMist Deep Pink
For big outer petals: Custom mix of AmeriMist Violet and Electric Purple (about 1:1)
For flower centers: Custom mix of AmeriMist Violet and Electric Purple (about 1:1)
For leaves and vines: Custom mix of AmeriMist Avocado and Electric Green (about 1:1)
For buds: Custom mix of AmeriMist Violet and Electric Purple (about 1:1)

ROYAL ICING COLORINGS* AND CONSISTENCIES:
White: Thick flooding consistency for small petals (optional), stenciling consistency for trellis, beadwork consistency for dots on flower center, and “glue” consistency for assembly
Pale Deep Pink: Thick flooding consistency for small petals
Medium Deep Pink: Beadwork consistency for dots on trellis
Pale Regal Purple: Thick flooding consistency for big petals
Dark Purple: Custom mix of AmeriColor Violet and Electric Purple (about 1:1), beadwork consistency for dots on cookie edges
Light Green: Custom mix of AmeriColor Avocado and Electric Green (about 1:1), thick piping consistency for vines and buds, and thick flooding and outlining consistencies for leaves
Medium Moss Green: Thick piping consistency for flower center
Yellow-Green: Custom mix of Lemon Yellow and Avocado (more yellow than green); outlining consistency for lines on top of flower center

*I used AmeriColor liqua-gel concentrated colorings, except for Chefmaster Moss Green for the flower centers
