💚ORANGE TAHINI CAKE RECIPE:

250 g tahini
300 ml orange juice
250 gr brown sugar + 1 tsp for the crust
400 g all-purpose flour
30 g baking powder
1/4 a tsp baking soda
10 dried and pitted plums
50 g chopped walnuts 1 tsp sesame seeds
💚INSTRUCTIONS:

Prepare diced and pitted dried plums, then finely chop the walnuts for added texture

Extract the juice from around 2 large oranges, aiming for roughly 300 ml of liquid

Blend the tahini and juice thoroughly in a bowl until achieving a delightful creamy paste consistency. You can do that easily with a regular spoon

In a separate large bowl, mix together all your dry ingredients: the flour, sugar, baking powder, and baking soda until thoroughly combined

Combine the diced plums and chopped walnuts with the tahini paste, ensuring thorough incorporation for a well-blended mixture

Gently incorporate the tahini paste into the flour mixture using a wooden spoon, ensuring thorough blending for about 3-4 minutes. Alternatively, a food processor can be used for this step-on low

The dough should resemble modeling clay—shiny, firm, and elastic in texture

Line a 25 by 10 cm / 10 by 4 inches inches baking tray with some parchment paper and empty the dough onto the tray

Line a 25 by 10 cm (10 by 4 inches) baking tray with parchment paper. Combine sesame seeds and brown sugar, then sprinkle half of the mixture evenly over the bottom of the tray, ensuring it's distributed throughout

Then evenly distribute the dough into the tray. We do that easily with our wooden spoon. Sprinkle with the rest of sesame seeds and sugar

Bake for 30 minutes in an oven preheated to 180°C (355°F), then reduce the temperature to 170°C (340°F) and continue baking for another 30 minutes
Amazing for a school or work sweet yet wholesome snack when you want to satisfy that sweet craving but want to have full control over what ingredients you consume!

Stored in an airtight container retains its freshness for up to 1 week.
