Dark Porter Style Beer
1 Pound Dark Roast Barley With Ground Coffee
1 Pound Dark Roast Barley With Ground Cocoa Nibs
9 Pounds Dark Roast Malt Extract
5 Gallons Distilled Bottled Water
1 Tube Pilsner Lager Yeast, WLP800, White Labs
1 Ounce (28.4g) Hops, Nugget Alpha 13.5% Beta 4.5 (First Pitch)
1 Ounce (28.4g) Hops, US Golding, Alpha 4.9% Beta2.3% (Second Pitch)
1 Piece Beer Stix, North American Oak, medium roast
Extra White Sugar
Bring one gallon of distilled water to a 150F (65.5C). Add both barleys and allow to steep for 30 minutes. Drain the liquid through a sieve and cheese cloth. Add one half gallon water to the remains. Stir and strain again. Bring a separate gallon of water to boil and add all the Malt Extract. When it boils add the first pitch of hops and turn off the heat. After 45 minutes pitch the second hops. Pour the brewed malt tea into the malt and hops mixture. Combine well and then add to your 5 gallon vessel. Add enough water to bring the level to the bottom of the bottle neck, allowing for space so the yeast can out gas.
Allow the entire mixture to come below 75F (24C). Then pitch the yeast and mix well. Test some of the liquid to know the hydrometer reading for predicted alcohol content. Place beer stix into vessel. Cork the vessel and run plastic tubing setting up a water trap for gas escape. Place vessel in warmish place and leave for 2 weeks.
After two weeks, decant the beer from the top down, being sure to not stir up all that has settled. Add 2 teaspoons of sugar per liter of beer, cap and store for another 2 week. This will develop the natural carbonation.
At the 4 week mark, place some beers in the refrigerator and enjoy 24 hours later! Allowing more time will allow the beer to mellow and develop in flavor. Enjoy!
