Nonna Rita's Calabrese Kitchen- Cuzzupe Calabresi (Easter Bread)

Cuzzuca Calabresi (Italian Easter Bread):
Ingredients:
-5lb bag of flour + some extra for dusting
-4 cups of sugar
-12 eggs (+more if you want to include on bread)
-Teaspoon of Anise seeds
-half a teaspoon of baking powder
-1 big Tablespoon of vegetable shortening
-2 blocks or fresh yeast
-2 cups of milk
Recipe:
Step 1:
Mix eggs while slowly adding sugar. Continue mixing until sugar melts and it becomes slightly fluffy but not whipped. (Tip: do not use cold eggs let sit out until room temperature)
Step 2:
Melt a tablespoon of vegetable shortening, and heat up milk. Take some of heated milk and mix in with fresh yeast, stir and break up to get as smooth as possible.
Step 4:
Add the mixed eggs and sugar into big bowl, begin by stirring in the melted vegetable shortening. Next add in warm milk, (not scalding hot). After milk, add in the yeast/milk mixture. Next the anise and baking powder. Continue mixing at each step, then finish it off by gradually adding the flour. (Add more flour if needed, but keep in mind this should be a very soft dough). Lastly cover up and let rise for 2 hours in a warm spot. (To keep warm my Nonna covers with blankets)
Step 5:
Now begin creating your shapes, there are many different options to choose from. Traditionally you will weave an egg into the dough, but this is optional. Watch the video to figure out how to make your shapes. After formed place on tray with baking sheet on it, then cover and let rest for another 15 mins.
Step 6:
Preheat oven to 400-425. Mix together 2 eggs and brush onto dough before placing into oven. Cook on bottom rack for ~10 minutes then finish on top rack for ~5 in a half minutes.
