Tomato Consommé or tomato essence, an intense tomato water. This tomato consommé is made by extracting the clear juices from within the very juicy cherry tomatoes. This may not be a classical consommé so I'm taking a small liberty in calling it tomato consommé. But I'm sure you'll forgive me when you sip at this chilled down super tomato flavoured consommé.

An intense tomato consommé or essence
Tomato Consomme

Cherry tomatoes 1k / 2.2Lb

Garlic cloves 3

Spanish onions 1/2

Celery 1 stick

White wine vinegar 1 tbsp

Sugar 1 tbsp

Herbs chives/parsley chopped 1 tbsp each

Salt and pepper

Muslin cloth for straining
