Three Ways to Light the Bronco | Oklahoma Joe’s
The Bronco Drum Smoker offers top-notch control over heat and smoke, whether you’re cooking a twelve-hour brisket or grilling a few burgers. Since cook temperatures and duration are heavily influenced by how your charcoal and fire are set up, this video shows you three different ways to light your charcoal—creating three distinct results.
For long burns with hefty cuts, fill the basket to its eight-pound charcoal capacity and place a single fire starter on one edge. Space out a few wood chunks that will smolder as the fire spreads slowly and evenly across the basket like a long fuse.
If you’re smoking at higher temps, try our “competition burn” setup with two or three fire starters and a couple wood chunks in the middle of the basket, and let the heat extend out from a concentrated central location.
For charcoal grilling, simply flip the heat diffuser upside down and place it under the charcoal basket, so it holds the charcoal up toward the grates. Then light a handful of charcoal in our Halftime XL Charcoal Starter (or something similar) and dump the lit charcoal on top of charcoal in your charcoal basket.
