Classic crème brûlée 💛 Recipe in the description! #cremebrulee #dessert #pastry #sweet #baking
Silky vanilla custard hidden under a crackly caramelized sugar shell. Made with fresh cream, real vanilla and baked slowly to ensure that the texture remains very smooth and creamy.
Recipe:
350ml heavy cream
4 large egg yolks
60g sugar
2 vanilla bean pods (or vanilla paste/extract)
More sugar for the caramelized top
Preheat the oven to 100C.
Place the heavy cream, half of the sugar, vanilla seeds and pods in a saucepan and bring to a simmer.
In another bowl, combine the egg yolks and the other half of the sugar and whisk until combined and slightly foamy.
Slowly pour in the hot cream mixture into the yolks while constantly whisking.
Strain through a sieve to remove any lumps and extra bubbles.
Divide evenly between 4 ramekins (115-120g each) and bake for 40-50 mins. The edges should be set and the center should still be slightly wobbly.
Allow to cool completely at room temperature. Refrigerate for at least 4 hours.
Before serving, sprinkle 1-2 tsp of sugar evenly over the crème brûlée and caramelize with a torch. Let the sugar harden for a couple of minutes before serving.
