CIA at Greystone Baking and Pastry Arts

Today, we’re at our California campus in the Confectionery Arts and Special Occasion Cakes class with CIA Chef Javier Mercado.

Our #proud2bcia students are mastering the art of sugar and celebration as they bring their cake visions to life with intricate sugar work, stunning designs, and expert techniques.

In this class, they focus on learning to make beautiful three-tiered wedding cakes, experimenting with ganache, gum paste, and pastillage, and even pouring, blowing, and pulling sugar—just like blowing glass! The perfect blend of sweetness and artistry!
