QUICK and EASY ways to spice up your 21 DAY FIX CONTAINERS: Chopped Vegetable Medley, Tropical Fruit Salad, Holiday Yam & Pecan Salad, Tuna Salad, Parmesan Crisps, Lemon-Dill Green Olives
Green Container Recipe:
- Marinate thinly sliced cucumbers, carrots, and red bell peppers in unseasoned rice vinegar overnight. Sprinkle with sesame seeds (Count as Orange container) for an Asian inspired salad.
Purple Container Recipe:
- Add unsweetened shredded coconut (Count as Orange container) to a medley of banana, pineapple, mango, and papaya for a tropical fruit salad. Squeeze with fresh lime juice and sprinkle with grated lime peel.
Yellow Container Recipe:
- Add chopped 10 pecan halves (Count as Blue container) to steamed diced yams. Sprinkle with nutmeg and cinnamon for a holiday inspired snack or side dish.
Red Container Recipe:
- Best and Quickest Tuna Salad: Combine 1 Red Container worth canned, rinsed and drained tuna with freshly chopped tarragon, 2 tsp. Dijon mustard, lemon juice, chopped celery, hot sauce and 1 tsp. extra-virgin olive oil (Count as a tsp.)
Blue Container Recipe:
Parmesan Cheese Crackers
(Makes 10 servings, 1 cracker each)
1¼ cups shredded Parmesan cheese
1. Preheat oven to 350° F.
2. Line a baking sheet with parchment paper or use a nonstick baking sheet. (Do not use nonstick cooking spray.)
3. Mound 2 Tbsp. cheese about 2-inch apart on the baking sheet.
4. Bake for 5 to 6 minutes, or until cheese is melted (or soft) and a light golden color.
5. Leave on baking sheet for 18 to 22 minutes, or until firm to the touch.
6. Carefully lift crackers from the baking sheet using a thin spatula or knife.
Container Equivalent: ½ Blue
Orange Container Recipe:
- Rinse olives to remove as much sodium as possible. Soak olives in lemon juice and fresh herbs (recommend dill) overnight.
