Authentic Sri lankan Roast Chicken with all the Secrets. First Time on Youtube. Muslim Wedding food.

-SRI LANKAN MUSLIM ROAST CHICKEN-
It's also called "ROSS CHICKEN" colloquially in our tiny island. Yes it does sound funny or racial... but this is exactly what it's called in Sri Lanka. When I was a kid we used to laugh thinking about the "Muslim fried chicken", wondering why it was given such a name... However this recipe dates back aeons and have been a part of our islands food and culture for many years.
There are many versions of this and most commonly sold in streetfood shops along with the #Kotthuroti and Sri Lankan #friedrice or biriyani.
Many years ago the chicken was pot roasted as opposed to deep frying and that's where the name was given as roast chicken or Ross Chicken.
With time the pot roasting method seems to be too much hassle and the deep frying method took place as it was easier and faster and tastier too.. but that also meant that many essential details of the original recipe was lost in translation or simply because convenience took over.
Such a recipe is this authentic roast chicken which has a delectable onion relish or I would like to call it onion jam was replaced with the raw onion salad or raw onion pickle. Only a very few people and traditional Muslim caterers still does the roast chicken with this onion relish and it's one recipe that needs to be on every menu.
The Chicken is marinated and cooked and caramalized onions are added along with the reduced juices of the gravy from the cooked chicken and made into a delicious jam which then is used to douse the hot fried chicken with.
It's the best version of Sri Lankan Roast Chicken that can match perfectly with our version of fried rice, kotthus or even noodles and yellow rice.

This is the go to chicken for celebratory meals in the Sri lankan Muslim culture. This fried chicken is served with almost anything and everything because it goes really well and so delicious.

Ingredients list for 1kg of skinless full Chicken. If you want to use chicken with skin make sure to keep it marinating at least for one hour before cooking.
4 large Bombay onions.
2 inch ginger and 1 whole pod of garlic for paste.
2 full TBS of Salt
2 full TBS of Pepper.
2 full TBS of chilli powder.
1 full TBS of Dark roasted curry powder.
(You can also add a little tamarind juice for the marinade if you like to make it more tangy and flavorful).
2 big tomatoes.
4 big green chillies.
4 TBS of coconut oil for tempering.
1 TBS of butter.
4 TBS of tomato ketchup or sauce.
2 TBS of soy sauce.
2 TBS of ghee for onions to caramalize.
1 1/2 cups of hot water.
Oil for frying.
