Cooking with That Chocolate Vegan: Vegan Feast Episode 1

Ingredients:
I head cauliflower or 1 container of florets
vegan bbq sauce
For cauliflower batter: 1/2 cup of unsweetened dairy free milk, 1/2 cup of water
3/4 cup all purpose flour( I used spelt)
2 tsp of garlic and onion powder
1 tsp cumin and paprika
1/2 head of cabbage
salt and pepper
2 packages of Spinach( or any greens you want to use)
Black Rice(follow directions on package)
1 package precooked seitan
Dijon mustard
Approximately 1/4 of a large onion
Approximately 4 tablespoons chopped garlic
Salt/Pepper
Juice of half a lemon
Directions:
For Cauliflower preheat oven to 450 degrees, take florets and coat in batter. shake off batter and place on parchment paper. Place in oven 20-25 mins flipping halfway thru. remove and coat in sauce. serve immediately( If You want extra crispy or not as wet of a sauce, place "wings" back in oven for 10 mins!)
For Cabbage: cut cabbage into wedges and rub with grapeseed oil( or oil of your choice) season with salt/pepper and top with sautéed onions/garlic. bake at 350 degrees for 20 mins until slightly crispy. remove and garnish with Dijon mustard.
For Seitan and Rice:
Cook Rice according to package same with seitan( I added teriyaki to enhance flavor)
For Spinach:
Heat Burner to medium-low. sautée onions and garlic with grapeseed oil( or oil of your choice)and salt/pepper until fragrant before adding the spinach. Sautee until wilted then add next package. repeat.
