This is what the pork is called in Chinese: 梅頭豬肉

One of the great things about going out to eat is ordering food you would never make yourself. And I never thought I would ever make Char siu myself because Chinese style roast meats stalls are culinary staples every person growing up with Cantonese food, well, you just don't even think about it. You want crispy roast pork? Go buy it!, Want Char siu for dinner? Go buy it. Roast duck? Of course I'm going to buy it.

But with lockdown already in it's 4th week, I'm trying to keep my outings to a minimum, which led me to this fantastic recipe. It's simple enough, and if I can do it on my first try, ANYONE can do it. The taste was exactly what you would get from a Hong Kong diner.

Char Siu Ingredients:

600g of pork shoulder (梅頭豬肉)
15g rice wine
45g soy sauce
105g maltose
20g sugar
20g oyster sauce
ground white pepper to taste
1 large garlic clove
2 slices of ginger

Ingredients for chicken congee:
one chicken leg (bone still in)
1 cup of uncooked rice
1 tablespoon of salt
1 tablespoon of cooking oil
2 slices of ginger
Liquid chicken stock
Spring onions
