Stuffed Eggplants with Tomato and Cheese — Easy & Delicious Dinner Idea! #recipe #eggplantrecipe

Juicy baked eggplants filled with flavorful ground meat, tomato, and melty cheese. This easy and satisfying dinner is perfect for any night of the week. Easy to make — and so tasty, you’ll be craving more!

Ingredients:
- 2 eggplants
- 200 g ground meat (any type)
- 1 onion
- 1 tbsp tomato paste
- 1 tomatoes
- A handful of fresh herbs (parsley or dill)
100 g shredded cheese
- Salt and pepper to taste
- Oil for frying

Method of preparation:
Cut the eggplants in half, make a grid with a knife, salt and bake until soft for 30 minutes at a temperature of 200.
In the meantime, fry the onion with minced meat, add tomato paste, salt and pepper - the aroma is simply bombastic!
We take out the eggplants, knead the pulp - they are already tender.
We spread the juicy filling, sprinkle with cheese and put it back in the oven for 10 minutes, and everything is ready.
