Soup
Sausage of choice ( I used the whole package )
Onion ( Chopped )
Garlic 6 cloves ( Minced )
Celery 6 already trimmed stalks ( chopped )
Carrots 2 large ( chopped )
Italian Seasoning 1 1/2 teaspoon ( or more to taste )
Fennel Seed 1 1/2 teaspoon ( or more to taste )
Chicken Broth ( 2 )
Cannellini Beans ( drained and rinsed ) 2 cans ( one will be pureed )
Greens of choice ( 2 big handfuls )
Avocado Oil 2 tablespoons

Add 1 tablespoon to pot, remove sausage from casings and sauté ( until brown , chopping into small bite size pieces ), when brown ...remove from pan
Add remaining oil to same pot, add onions cook for a minute , add garlic...continue to cook for another minute...add celery, carrots and spices...cook for about 2-3 minutes. Add sausage back to pot. Add 1 can of whole beans, add 1 can pureed beans and chicken broth . Allow to simmer about 20-25 minutes. Add greens a minute before serving. Add your favorite grated cheese.
