Mo's Crêpe recipe:

1 cup. all-purpose flour
2 large eggs
1 tbsp. vanilla sugar
1, 1/2 cups. whole milk
1 tbsp. butter
1 slice of smoked salmon per crepe
mushrooms sliced
grated Emmental cheese

In a large mixing bowl whisk the flour, sugar and salt until combined. Then create a well with flour and 1 egg. Gradually pour in milk, whisking to combine after each addition.

In a frying pan over medium heat, melt a tsp of butter. drop batter evenly onto pan, swirling it to evenly coat the pan.

Next coat the crepe with a whisked egg, on one half of the crepe put your grated cheese, mushrooms and salmon, salt and pepper to taste.

Flip over the side of the crepe without the ingredients, pat down to seal the edges. Flip the crepe to cook on the other side.
