How To Make Home Cured Bacon...In this episode i show you how to make Home Cured Bacon, using a simple home made Bacon cure. Its a mixture of Salt, Sugar and potassium nitrate
(saltpetre). This is another really simple method, just weigh your chosen piece of pork, weigh out the appropriate ammount, 30 grams to each KG, then rub it into your pork, seal in a bag and giving it 1 day for every half an inch in thickness and 2 days over.
Its then washed, patted dry and left to equalise in the fridge for 2 to 5 days, this will allow the cure spread evenly throughout your pork and let the flavour develop, then its ready to hit the pan. Another simple way to make great bacon at home.
