Rissoles | Leftover Meat Patties

I used to love the frozen Birdseye rissoles we had when I was a kid, but I don't think they make them any more. But it's very easy to make homemade rissoles. I'm pretty sure rissoles should be made with leftover meat - just about any kind of meat is acceptable, but I prefer lamb. I have seen recipes that make rissoles from fresh mince. I'm not sure that's right, but I'm not about to set myself up as the Rissole Police. I believe rissoles are still very popular in Australia.
