Ingredients
12 thick-cut slices of bacon
3 tablespoons honey
2 tablespoons sriracha
2 tablespoons brown sugar
1 tablespoon olive oil
1 teaspoon BBQ rub (your favorite blend)

Method
Prep Time: 15 minutes | Cooking Time: 50 minutes

Fire Up the BBQ: Let’s get that barbecue rolling with the best barbecue fuel: Heat Beads Blue bag briquettes. Set it up for indirect heat at around 120°C (250°F).

Make the Glaze: In a small bowl, mix together honey, sriracha, brown sugar, and olive oil. This sweet and spicy glaze is about to take your bacon to the next level.

Prep the Bacon: Lay out those thick-cut bacon slices on a sheet of parchment paper or a wire rack. Brush both sides generously with the honey sriracha glaze, ensuring each slice is fully coated. Now sprinkle your favorite BBQ rub on top for an extra punch of flavor.

Smoking Time: Place the glazed bacon on the cooler side of the BBQ. Let it smoke away for about 45-50 minutes. Halfway through, flip the slices to achieve that perfect caramelization and crispiness.

Serve Up: Once it’s done, remove the bacon from the BBQ and let it rest for a few minutes. You’ll have sticky, sweet, and spicy bacon that’s perfect for snacking, a BBQ side, or crumbled over a salad.
