Smoked rack of lamb with chimichurri

Smoked racks of lamb. I added some amazing smoke flavor by using my @bradleysmoker P10. I smoked them at 225 degrees until they reached an internal temperature of 110, then a quick sear 2 min per side followed by a 10 min rest. Topped with some delicious chimichurri sauce.
