**Grandma's Hard Cinnamon Candy**

**Utensils**
3-quart saucepan
2 Stirring spoons
Silicone molds
Candy Wrappers
Candy Thermometer
Measuring cups
Measuring spoons
2 cup glass measuring cup
2 Silicone droppers

**Ingredients**
1 cup of water
3 cups of sugar
1-1/4 cups of light corn syrup
1 tablespoon of red liquid food coloring
1 tablespoon of cinnamon extract
8 ounces of powdered sugar
Vegetable oil, for greasing molds

**Preparations**
1. Wash and dry your silicone molds.
2. Use a wire rack, placing it under a sheet pan. Place the silicone candy molds on the top of the sheet pan, arranging so that the molds are closest to you when you go to fill them. (Place funnel and droppers close by).
3. Grease molds well using vegetable oil, and drain excess oil.
4. Gather all ingredients.

**Instructions**
1. In a 3-quart saucepan, combine 1 cup of water, 3 cups of sugar, 1-1/4 cups of corn syrup, and 1 tablespoon of food coloring. Bring to a boil over medium heat, stirring occasionally. Cook for 2-3 minutes to dissolve sugar crystals.
2. Cook on a medium heat (DO NOT! Increase temperature), stirring, until the candy reaches the hard-crack stage (300°F). Remove from the heat; stir in the 1 tablespoon of red liquid food coloring and the 1 tablespoon of cinnamon extract (keep face away from the mixture as the extract is strong). Slowly, pour into a 2-cup glass measuring cup.
3. Immediately use a dropper to drop into prepared molds. Reheat the liquid candy when it starts to harden. Microwaving for 20 seconds a few times makes it easier to work with. Cool completely (1 hour).
4. Remove the candy from the molds. (Roll in powdered sugar)
5. Wrap candies individually in candy wrappers or place hard candy in a candy dish, gift bag, or an airtight container.

**Yields**
100 Grandma's Hard Cinnamon Candy. You can make more depending on the molds.
