Japanese Caramel Custard Pudding Cake

🍮caramel
sugar 65g
cold water 10g
hot water 25g
🍮custard pudding
egg 3
egg yolk 1
sugar 40g
vanilla extract 2g
milk 295g
35%cream 30g
🍮castella cake
egg 2
sugar 25g
honey 15g
vanilla extract 2-3drops
Flour 60g

🍮Caramel
1.pour sugar and cold water into saucepan,heat it for caramelizing over a medium heat,do not stir,once it starts caramelizing,just swirl the pan.
2.adding the hot water in the pan when it reaches nice golden color,(the color gets darker,the taste gets bitter),continue cook for another 30‘s,remove from the heat
3.carefully pour the caramel in the molds,refrigerate for 30mins.
🍮2.Custard pudding
1. Adding eggs,1 yolk, sugar, salt, and vanilla in a medium bowl, then whisk all
together until well combined.
2.Microwave milk and whipping cream in the glass for 1.5-2mins(warm)
3. Gradually pour warm liquid in and keep continue whisking until all ingredients are well combined.
4.Strain pudding through the strainer and set aside.

🍮3.Castella Cake
1. Add egg,vanilla, sugar, and honey in the bowl
2. Place it over a large bowl of boiled water, whisk it until reach 34
3. Move it from the hot large bowl, beat them together with an electric hand mixer until the mixture being thick and the color becomes pale.
4. Sift flour in and fold it with a rubber spatula.
5. Put the batter in the piping bag and set aside.

Assemble.
1. Pour the pudding mixture in the cups.
2.Pip the cake batter in the cup until it reaches the top of the cup.
3.place the cups in the baking tray that fills with hot water halfway up to the top.
4.bake for 45mins in the preheated oven at 150 Celcius.
5.let it cools down to room temperature, and you can enjoy it directly in the cup or flip it upside down on a small plate and eat it!

🍮焦糖
白砂糖 65g
冷水 10g
热水 25g
🍮布丁
鸡蛋 3个
蛋黄 1个
白砂糖 40g
香草精 2g
牛奶 295g
淡奶油 30g
🍮蜂蜜蛋糕
鸡蛋 2个
白砂糖 25g
蜂蜜 15g
香草精 2滴(可不加)
低筋面粉 60g

杯子模具:230g/杯
1. 砂糖+冷水倒入锅中,加热至焦糖液变色,晃动锅使颜色均匀(不需要搅拌)
2. 到达想要的颜色,迅速倒入热水,搅拌均匀,再煮30秒,关火,倒入模具中,12-13g每个杯子
3.放入冰箱,准备布丁液,牛奶+淡奶油倒入锅中加热至边缘处微微冒泡
4.鸡蛋+糖+香草精打散,边搅边到加热的液体,搅匀过筛,倒入容器中(125g)
5.鸡蛋+糖+蜂蜜+香草精,打蛋器搅拌打散,隔水加热至35度,电动打蛋器打发至有纹路的糊状
6.加入过筛的面粉,刮刀拌匀
7. 装进裱花袋,挤入容器中,抹平
8.烤盘倒入温水,进烤箱:150度/40分钟(水浴加热法)

1.熬焦糖不要把火调小,温度的骤降会导致返砂
2.颜色越深,焦糖苦味越重,颜色越浅,焦糖会越甜,没有固定标准,大家根据自己的口味来选择就好[赞R](因为我比较喜欢有苦味的焦糖,所以可以看到我的颜色深一点)
3.挤蛋糕糊的时候,沿着杯壁先挤一圈,这样面糊不会漂在布丁液上.
