It was a bit of a windy day in North Carolina, and a great time to cook up some Chicken Wings on the Weber Kettle and Slow N Sear. On todays cook we are using "The Rub" from our friends at GQue BBQ.

Anyways, on this cook we are first going to rub the chicken wings down with "The Rub" and once it's fully coated you are going to place them in the fridge to allow the salt to go into the meat and start to dry the skin so that when we cook them the skin becomes more crispy.
After a couple of hours we pulled the Chicken wings out and placed this on some metal skewers. This is a great tip that will allow you to flip your wings all in one motion and can even save your wings from getting to much direct heat later on in the cook. Once they are on the skewers, place the indirect opposite the slow n sear and begin cooking them at between 375-425 for 20 minutes. After 25 minutes you will then flip the wings and continue cooking the wings for another 10 minutes or so until the wings reach an internal tempreture of at least 175 degrees or higher.
After about 35 minutes total cooking time we are going to remove our easy spin grate and get our wings set up on each side so we can sear our wings for about 20-30 seconds on each side using the cold grate technique which is easy to do when using our Easy Spin Grate.
Once both sides have been seared the wings are done and ready to eat.
