Cheap Vegan Chickpea Curry (from Scratch, High Protein, Budget-Friendly & Healthy)
This is one of my go-to comfort meals. It’s creamy, cozy, and made entirely from pantry staples. This recipe is perfect if you’re eating plant-based on a budget or just trying to make nourishing food that feels like a warm hug.
I hope this shows that you don’t need fancy ingredients or expensive vegan substitutes to make something really good. 💛

🥣 INGREDIENTS (serves ~6)
1 ½ cups dried chickpeas (soaked overnight + cooked) or ~3 cups cooked https://amzn.to/3H1HGW0
1 yellow onion, diced
1 tsp garlic
1 tsp ginger
1 tbsp oil
1 tsp cumin
1 tsp turmeric
1 tsp paprika

1 tsp curry powder
1 (28 oz) can crushed tomatoes https://amzn.to/3J8j1Q3
1 (15 oz) can full-fat coconut milk https://amzn.to/41xAFmD
1 tbsp tahini https://amzn.to/4fzaKRw
2 tbsp nutritional yeast https://amzn.to/3H1HLZO
4 tbsp coconut yogurt
Salt to taste
Optional: lemon/lime + cilantro for serving
🧄 INSTRUCTIONS
Soak & cook chickpeas if you haven’t already. (I soak overnight, then simmer for about 45–60 min until soft.)
In a large pan, heat oil and sauté the diced onion until soft and golden.
Add garlic and ginger, sauté 1–2 mins until fragrant.
Stir in cumin, turmeric, paprika, and garam masala. Toast for about 1 min.
Add crushed tomatoes, coconut milk, and cooked chickpeas.
Simmer for 15–20 mins, stirring occasionally.
Stir in tahini and nutritional yeast. Let it simmer 2–3 more mins.
Turn off heat and stir in the coconut yogurt and lemon juice. Add salt to taste.
Serve with rice + a squeeze of lemon and chopped cilantro.
