How to Fix a Misaligned Door Latch (Latch doesn't Align with Strike Plate)

If you have a door latch that is misaligned with the strike plate, causing the door to not latch closed, this is an easy solution.
I typically correct the underlying issue first such as bent or loose hinges, out of square jamb, etc, but this can be an easier and longer lasting solution.
