1 x pack vegan chicken (I use ‘What The Cluck’)
1 x large white onion, sliced
1 x small red pepper, sliced
2 x cloves garlic, minced
1 x cup white wine
1 x tsp smoked paprika
800ml vegetable stock
8 x threads of saffron
400g paella rice
4 x chargrilled artichoke hearts
1 x cup frozen peas
Lemon wedges and parsley, to serve
