The Salmon in a Lettuce Robe

Today, we honor a marvelous book publisher: Les Editions de l'Epure and we are making the Salmon in a Lettuce Robe, a recipe from "Le Lettuce, 10 ways to prepare it".
The Ingredients you need
Salmon Filet (1 per person)
Large leaves of lettuce (or similar)
Salt, Pepper
Something to steam the leaves

For the Sauce
Tbsp Butter
50ml of Heavy Cream
50ml of White wine (here I'm using Arak)
1 Shallot
Herbs
