*Ingredients (4 pax):*
*Instant pickle Punjabi way*
- Raw mango-300 gm( cut lengthwise)
- Rock salt -1 tbsp
- Kashmiri red chili powder -1 tbsp
- Fennel seeds coarsely ground -1 .5 tsp
- Kalonji / Nigella seeds-1 tsp
- Turmeric-1 tsp

*Instant mango ginger garlic pickle*
- Raw mango thin sliced-300 gm
- Ginger + garlic chopped -1 cup ( 1/2 cup each)
- Spices for the roughly ground mixture
- Cumin seeds -1 tsp
- Coriander seeds-1 tsp
- Fenugreek seeds -1 tsp
- Mustard seeds-2 tsp
- Dry Red chili -4
- Black salt -1 tbsp
- Nigella seeds-1 tsp
- Carom seeds -1/2 tsp
- Asafoetida -1/2 tsp
- Turmeric-1 tsp
- Kashmiri red chili powder -2 tbsp
- Preheated mustard oil -1/2 cup

*Khatta meetha pickle*
- Raw mango -300 gm cut lengthwise
- Sesame oil -2 tbsp
- Cumin seeds -1 tsp
- Fennel seeds coarsely ground -1 tsp
- Asafoetida -1/2 tsp
- Rock salt-1 tsp
- Black salt -1 tsp
- Jaggery powder -1 cup

*South Indian style pickle*
- Raw mango cut into cubes- 300 gm
- Rock salt- 1 tbsp
- Turmeric- 1 tsp
- Nigella seeds- 1 tsp
- Fennel seeds coarsely ground -1 tsp
- Kashmiri red chili powder -2 tbsp
- Mustard oil -1/2 cup
- Dry Red chili -4
- Mustard seeds-2 tsp
- Asafoetida -1 tsp
- Curry leaves -15

*Instructions:*
*Instant pickle Punjabi way* - In a bowl mix all the ingredients of instant Punjabi pickle.
*Instant mango ginger garlic pickle* - In a bowl mix raw mango slices and chopped garlic ginger. In a separate pan dry roast the spices to be grinded. Now mix all the mentioned spices, ground spices and preheated mustard oil. Mix well.
*Khatta meetha pickle*- In a pan ,add oil ,mango slices and all the spices. Cook till the mangoes are half tender. Remove from heat, add jaggery powder, and mix well.
*South Indian style pickle*- In a bowl ,mix mango cubes, both salts, Nigella seeds, fennel seeds powder, Kashmiri red chili powder, turmeric powder. In a tempering pan ,temper the oil with red chili, asafoetida, mustard seeds and curry leaves. Pour the tempering over the mango mixture, mix well.
