Cottage Cheese Egg Bites Sliders Recipe - High Protein Breakfast Sandwich

🍳 Muffin Tin Egg Bites
These turned out so good that I made a double batch the day afterwards. They’re packed with flavour, turn out really light and fluffy, and they are such an easy addition to add protein to a quick lunch or breakfast.

Makes roughly 6 egg and cheddar bites

◈ I N G R E D I E N T S
◆ 225g Jocca Cottage cheese
◆ 4x Large eggs
◆ 50g Shredded cheddar cheese
◆ 20g Chopped fresh spinach or cooked bacon bits

⦿ M E T H O D
① Blend the cottage cheese and eggs together until light, airy, and pale yellow.
② Grease a muffin tin thoroughly. Pour the egg mixture into the slots, filling each about 3/4 of the way.
③ Distribute the shredded cheese and spinach/bacon into each slot, stirring gently with a toothpick.
④ Bake at 175°C for 20 minutes until the bites have puffed up significantly and the tops are set.
⑤ Let cool for 5 minutes before removing from the tin.
