Finding my Rhythm in the Halcyon of the Harvest | Cottage Vlog 10

This week was such a beautiful, peaceful, wonderful week! I finally found my rhythm again at the turn of seasons after the long months of summer and I am really looking forward to all that is to come!
As per usual I spent a great deal of time in the kitchen this week (I promise here soon I will mix it up a bit but my heart has been there as of late)
In this video I made my world famous apple pie! is that too much to say? probably... but I do know that people around the globe have tried it out for themselves so ehh it may just be! but anyways I will link a video detailing the recipe along with some new notes on it. I also made fire cider vinegar for the winter months to come. I'll delve into it a bit deeper when it comes time to finalize it but that'll be in the weeks to come.

Apple Pie

Ingredients:
Crust
(double this recipe if you want a crust for the top of the pie)
2 cups flour
1 tsp salt
10 Tbs cold cold butter
2 egg yolks
1 Tbs sugar (this is something I've been adding to my crusts recently and oh boy do I recommend it!!!)
4 tbsp ice water

Filling
10 green apples
1 cup brown sugar
1/4 tsp salt
2 tsp cinnamon
1 tsp ground cloves (new addition to test out - do less I'm trying 1/2 tsp next time around)
1/2 tsp nutmeg (new addition to test out)
1/3 cup lemon juice
1/2 cup maple syrup
3 1/2 Tbsp cornstarch
2 Tbs water
3 1/2 Tbs butter
-I also am thinking about maybe adding some bourbon to the filling next time I make it, maybe something like 3 Tbs but that is something to experiment with

Crumble Topping
(this is my baseline recipe I usually tweak it a little bit as I go)
1/2 cup flour
1/2 cup sugar
1/2 cup brown sugar
1/2 cup oats
3/4 tsp cinnamon
1/4 tsp ground cloves (new addition)
1/4 tsp nutmeg
6 Tbsp cold butter

Fire Cider Vinegar

Ingredients:
3/4 cup grated fresh horseradish root
1 medium fresh chopped onion
1 medium bulb of chopped garlic
1/2 cup or more grated ginger
3 - 5 Jalapeños ‘ To Taste’ means should be hot, but not so hot you can’t tolerate it. Better to make it a little milder than to hot; you can always add more pepper later if necessary.

Place herbs in a liter canning jar or two quart jars and cover with 32 ounces raw apple cider vinegar. Cover with a tight fitting lid.
Place jar in a warm place and let for three to four weeks. Best to shake every day to help in the maceration process.
After three to four weeks, strain out the herbs, and reserve the liquid.
Add honey ‘to taste’. Warm the honey first so it mixes in well.
Rebottle and enjoy! Fire Cider will keep for several months unrefrigerated if stored in a cool pantry. But it’s better to store in the refrigerator if you’ve room.
