향신료는 요리에 향과 맛을 더하는 부재료로 쓰이며, 주로 식물의 씨앗·열매·뿌리·줄기·꽃 등을 말린 것을 일컫습니다. 고추와 후추, 겨자, 마늘, 카르다몸, 강황, 계피, 커민 등 지역마다 사용하는 향신료 종류가 다양할 뿐 아니라 각각의 풍미도 천차만별입니다. 인도나 인도네시아, 중동과 북아프리카 일부 지역을 중심으로 발달한 향신료는 중세 시대부터 유럽인들에게 귀한 사치품으로 여겨져 세계 무역의 역사를 바꾸는 전환점을 만들기도 했으며, 국가와 민족의 정체성을 형성하는 데도 큰 영향을 미쳐왔습니다. 최근 들어서는 온라인 상거래를 통해 각국의 향신료를 쉽게 구할 수 있어 식문화의 경계를 초월하고자 하는 많은 푸디에게 각별한 관심을 받는 중입니다.
