Here is a brief video on sweetening homemade wine without popping off or blowing off the corks. The key is to remove as much yeast as possible and prevent any remaining yeasts from multiplying using potassium sorbate. This is very simple and something that any home winemaker can do but without some basic steps, you will end up with a huge mess and an unintentionally carbonated or sparkling wine.
