Master class in baking quick simple bread from a French Master Baker Richard Bertinet

Richard Bertinet a demo at the Cake and Bake show in London (2013).

The recipe for the simple quick bread dough is:
1 kg flour
1 teaspoon quick yeast or 20g fresh yeast
750ml luke warm water (idealy at body temp)
20g sea salt.

Method:
Mix, then kneed, then rest the dough for 1 hour before baking.

Tip Tips:
The more yeast you use the quicker the bread goes off.
