🔥The BEST vegan Colombian style empanadas using IMPOSSIBLE MEAT+ Homemade sofrito

This is the only empanada recipe you will ever need. I am telling you they're THAT good. Vegan or not these empanadas are the best! Who knew eating plant based could taste so good. For the vegan meat I am going to be using the impossible burger meat. It taste so much like meat I almost forgot it was vegan 😂 I reccomend using that if you can but any beefless crumbles will do.
Sofrito

Chop up 1 red bell pepper, green & orange( or yellow) &1 white onion. Take 1 bunch of cilantro , 1 cup garlic cloves, the juice of 1 1/2 lime, 1 TBS sea salt, 1/4 tsp black pepper, 1/4 tsp ground cumin & 1/2 cup of water. Add all ingredients and blend together.

Take 1/2 cup white vinegar, 1/4 cup water, and 1-2 jalapeno peppers and blend. Then add in 3/4 cup cilantro, 1/2 cup diced green onions, 1 tsp sugar, 1/4 tsp sea salt, the juice of one whole lime & 2 TBS grape seed oil or any oil you choose. DO NOT BLEND pulse so that it can chop up a bit. Pour into bowl and add in 1/2 cup diced tomatoes.
Vegan Colombian style empanadas

Start by skinning and boiling 3 yukon gold potatoes. Add to a bowl along with a half packet of sazon. Sprinkle on some garlic powder & black pepper. About 1/4 tsp. Take a potato masher or fork and mash to combine not too much though. Give it a gentle mix and set aside.
Add 1/4 cup diced white onion to hot skillet with a little oil. Let cook down until golden brown on medium heat. Next add in 1/4 cup green onions, 1 cup diced tomatoes, half red bell pepper diced and 2 tsp minced garlic. Then let cook down for 2 mins. Add in the impossible meat or what ever beefless crumbles you use. Then let the meat brown for about 5 mins. Add in 1 & 1/2 pack of sazon. Sprinkle on some black pepper & garlic powder. Add in 2 TBS of the homemade sofrito. Mix cover with lid and let simmer for 15-20 mins. When its done add to potato mixture and taste the filling add sea salt to taste & more garlic powder if you feel it needs it.
Empanada dough

Take 2 3/4 C luke warm veggie broth. you can use water but I reccomend using better than bouillan veggie base. You're also going to need 3 cups precooked corn flour NOT cornmeal ( I used P.A.N brand) Maseca is a good brand as well. Start by adding 2 cups of broth and add a little more as you go along if needed. Mix all together, if its too liquidy then add a little more corn flour at a time, if its not liquidy enough add more broth. Mix until it combined into a dough once it turns to a dough knead until combined.
Next Place dough between two gallon size ziplock bags or cut the sides *see video.
Take a plate and gently press on it to form a disc. Flatten it out a bit then add a small amout of filling. Make sure edges are sealed. Deep fry at 360 degrees for 2 mins or until golden brown. If frying in pan deep fry on both sides for 2 mins. Enjoy:)
