Kousa Mahshi (Labanese dish with Desi Twist)
Ingredients
Zucchini Stuffing
• Zucchini 1 kg (or egg plants)
• Chicken mince 1/2 kg
• Fresh coriander 5-6 tbsp chopped
• Salt to taste
• Red chili powder 3/4 tsp or more
• Turmeric powder 3/4 tsp
• Cumin seeds 1/2 tsp
• Cumin powder 1/2 tsp
• Saffron strands 1/2 tsp
• Black pepper powder 1/4 tsp
Other ingredients
• Garlic cloves 5-6, slivered
• Potatoes 5-6 medium, cut into big chunks
• Tomato paste 6 tbsp (300grams)
• Salt to taste
• Cumin powder 2 teaspoons
• Water 1.5 L
Preparation
1. Wash and remove the stems of the zucchinis.
2. Using a corer, scrape out the flesh of the zucchini leaving around a half centimeter margin.
3. Coarsely chop the flesh in a chopper.
4. In a bowl, add chicken mince, coriander, salt, red chili powder, turmeric powder, cumin seeds, cumin powder, saffron strands, black pepper powder and the chopped flesh of the zucchini.
5. Mix well and fill this stuffing in the zucchini.
6. Arrange the zucchini in a single layer in a cooking pot along with the potatoes. Put slivered garlic on top.
7. In a mixing bowl, mix tomato paste in a little water. Add salt and cumin powder and mix well. When mixed properly, add the remaining water.
8. Add this tomato paste mixture to the zucchini pot.
9. Cover and bring to a boil. No reduce the heat to a medium low and cook for 40-45 minutes until the zucchinis and potatoes are done.
10. Enjoy with boiled Rice.
