Authentic Knishes- with my Grandma// Traditional Ashkenazi Recipe

Hello,
In today’s video I asked my grandma to teach me how to make Knishes and share it with you. Knishes are a traditional Ashkenazi Jewish and Ukrainian dish that consists of a potato filling covered with dough and baked. It is a dish that my Grandma would make for all of us during special occasions and it is everyone’s favorite thing she makes. She has always made it vegan, by accident, but some people do use egg or butter to make them. ○ Full Recipe
◗Ingredients:
For Dough
5 cups of flour of your choice
1 cups lukewarm water
¼ cup oil
For Filling
1 large onion (or 2 medium)
5 medium potatoes (2 lbs.)
Any spices of your choice (I used some salt and pepper)

◗Procedures:
1.Start off by preparing the dough. In a large bowl add in the lukewarm water, then the oil, and finally start adding the flour a cup at a time and mixing it well.
2.Once you have added enough flour to get a unified and non-sticky dough make it into a ball, cover it with a towel, and let it rest for 30 minutes-1 hour.
3.Meanwhile you can prepare the filling, to start dice the onion. Add to a pan and sauté with water and add water as needed to deglaze the pan, cook until golden brown.
4.Meanwhile peel and chop the potatoes into medium chunks and steam or boil in water until soft.
5.Once ready add the potatoes to a bowl and mash either using a fork, a potato masher or an immersion blender until you get the consistency you desire.
6. Then add in the onion and any spices you choose and mix them in.
7.Then it is time to start making the Knishes, so check on your dough (it should have risen).
8.To prepare the knishes you will take a piece of dough and roll it out into about 6x18 inches (15x45 cm) rectangle of about (you can even the sides out by cutting them with a knife), then place a thin strip of the filling about a bit above the bottom edge, next you will roll the dough from the bottom up until almost the end and then you moisten the top part you have left with a bit of water, and roll it over to seal it.
9.Now you will create the knishes by cutting the roll you created into 1-inch (2.5 cm) pieces. My grandma likes to do it using the side of her pinky. Then you smoosh the sides a bit and close the dough on both sides and place it on a pre oiled pan.
10.Once you have repeated these steps with all the dough put the pans in the oven for about 20-30 minutes at 350 degrees Fahrenheit (or 180 degrees Celsius) or until a bit brown. If I have two pans, I like to flip between them halfway through.
